Ingredients:

2 pounds of beef roast
1 chopped or sliced onion
2 packages of fajita seasoning
2 tablespoons of minced garlic
1 can of diced green chilis
1 can of refried beans
1/4 cup fresh cilantro
1 package of Colby Jack cheese
10 soft taco shells

Instructions:

1. Heat a skillet with olive oil on high heat. Sear the beef roast on both sides in the skillet, then transfer it to a slow cooker set on high.

2. Add onion, garlic, two packets of fajita seasoning, and 1/2 cup of water to the slow cooker. Cook for around 4 hours on high or until the beef is tender.

3. Shred the beef with two forks and mix it with diced green chilis and chopped cilantro.

4. Preheat the oven to 400°F. Warm refried beans on the stove. Warm soft taco shells in the microwave until pliable.

5. Spray a baking sheet with cooking spray.
